Do you ever have cravings for chocolate? Or is that a silly question…
If you’re anything like me, you sometimes find yourself fantasizing about this decadent, god-given gift to the earth.
I have my suspicions some of the greatest love poems and songs weren’t written about people. They were written about cacao!
Cacao is essentially chocolate in its pure, unadulerated, and even healthy form. (Read about the 8 amazing health benefits of cacao for more information!)
Cacao comes in many practical forms but cacao nibs and cacao powder are the two most common products you’ll find on the market.
Wilderness Family Naturals carries both fermented and non-fermented raw cacao powders and fermented and non-fermented raw cacao nibs. All are produced under the highest organic and sustainable standards.
But what is raw cacao? What are raw cacao nibs? What is the difference between cacao powder and cacao nibs???
What Is Cacao Powder?
Cacao powder is created by grinding down cacao beans and extracting the cocoa butter (the fat component of the cacao bean). The powder is created from either fermented or non-fermented cacao beans. (Most cacao products available undergo a fermentation process unless specified as being non-fermented.) Fermenting reduces the cacao bean’s natural bitterness while also enhancing the cocoa flavor.
Conventional cocoa powders are ground under high temperatures of up to 300° F. The overall nutrient profile and health benefits mentioned previously are degraded by this high heat processing. In contrast, raw cacao powder is made by cold-pressing unroasted cacao beans at a temperature that doesn’t exceed 104°F.
The living enzymes and nutritional benefits, for which cacao is so well-known, are preserved using this method.
Cacao powder is perfect for adding to smoothies, cakes, dips, spreads and of course, for making your own chocolate. Substitute raw (fermented or non-fermented) cacao powder in recipes which call for regular (not Dutch-processed) cocoa powder.
Furthermore, add cacao powder when you make your own natural beauty products, such as homemade bronzers, body butters, and moisturizing creams.
What Are Cacao Nibs?
Cacao nibs are simply the peeled and chopped up version of the raw, unprocessed cacao beans.
You can grind up your own cacao nibs and extract the oil, but really — who has time for that?
Cacao nibs are about half oil/butter and half fiber residue and make a great replacement in recipes that call for processed chocolate chips. Just be aware: cacao nibs are bitter, not sweet like chocolate chips.
Use cacao nibs in cakes, muffins, granola, and cupcakes. Cacao nibs add extra crunch to ice cream, pudding, or oatmeal.
They cannot be used in place of cocoa/cacao powder in recipes since they are completely different in texture.
