Getting back into a routine after the holidays is always a tricky venture. Which is why you need speedy, simple, healthy dinners to make the transition easier! Sheet pan meals are a great way to get the family fed and not have to worry too much about clean up. Less dishes = less time. This sheet pan lemon poppy seed chicken dinner is not only simple, but the dressing helps keep the meal sweet, light and flavorful – and still no extra dishes!

When trying to keep your family healthy, making your own dressings and sauces is an awesome step. However, during the week when life is crazy, it’s not always possible to spend the time whipping up your own.

Which is why you should have a few healthy staples on hand, like Wildly Organic Lemon-Poppy Seed Dressing!

Sheet Pan Lemon Poppy Seed Chicken Recipe

Originally made for salads, this delicious lemon poppy seed dressing works nicely on cooked dinners also. It’s light and refreshing due to its the lemon base but it also has a lot of health boosting ingredients like onions and garlic.

This dressing is on the sweeter side thanks to the coconut sap (a sweetener similar to molasses) which also gives it a thicker consistency. This consistency almost caramelizes once cooked making the chicken dinner a bit more indulgent than just regular roasted chicken.

The ingredients in the dressing are unrefined and haven’t been pasteurized. So, opting for this dressing in place of making your own is a great time-saving way to keep your family healthy!

Another aspect that’s overlooked when making healthy family meals is cruciferous veggies. A high source of fiber, folate and vitamins, it’s not often we eat these veggies. And let’s face it, steamed brussels sprouts aren’t exactly appetizing.

However, brussels coasted in a sweet, lemon syrup are much more enjoyable. In fact, they’re absolutely delicious!

This sheet pan lemon poppy seed chicken dinner comes together quickly (one bowl and one pan) and saves you a big mess and gives you more time to spend with your family. It’s a great balance of filling protein and healthy carbohydrates and thanks to the dressing, your taste buds will love it. Whip it up on a busy weeknight and rest assured that your family will be fueled and ready to go post dinner. Plus, there won’t be a sink full of dirty prep dishes!
