Pancakes are easily one of everyone’s morning staples, especially on a lazy weekend morning (though if you have kids, lazy mornings definitely don’t exist!). But plain old box pancakes get boring – and provide little to no nutritional benefit. Which is why like most things, homemade is best! Especially when it comes to these paleo coconut pancakes.

Homemade paleo Coconut pancakes not only taste great and are simple to make but they give your mornings a shot of fuel instead of an impending crash.

Paleo Coconut Pancakes Recipe

These paleo coconut pancakes are stuffed full of everything healthy for you, making them an easy necessity for your next pancake day.

Using both Wildly Organic Coconut Flour and Wildly Organic Almond Flour, these pancakes are loaded up on healthy fats. Not only does this base make them nutrient dense, but they taste a bit more decadent and satisfying, too!

One of the fun things about coconut flour is that it gets very dense once mixed with liquid (it actually absorbs the liquid!). Many people associate this feeling with a heavy carbohydrate meal. However, coconut flour is actually low in carbs- so you kind of get the best of both worlds when using it!

Thanks to the real-food based ingredients, these gluten free coconut pancakes not only help you curb your pancake cravings but provide a healthy amount of fuel too.

Starting your morning off with a quality meal helps you stay focused, full and fueled throughout the morning. This means that you’re less likely to crash and grab a quick, sugar high snack immediately after breakfast.

So really, these paleo coconut pancakes are kind of a necessity if you ask me!

Gluten free and dairy free, these paleo coconut pancakes taste great and are allergy friendly. They’re easy to whip up and a great option for a slow lazy morning. Or, if you’re on your game you can make a big batch, freeze and let the kids heat them up for a healthy breakfast before school!

Top with your favorite nut butters, maple syrup and Wildly Organic Coconut Flakes. These healthy pancakes definitely give your breakfast a bit of an indulgent feel.

Instructions
  1. In a large bowl combine all dry ingredients and lightly mix.
  2. Warm the coconut oil in the microwave until just melted.
  3. Whisk all wet ingredients except the almond milk in a small bowl.
  4. Add wet ingredients to dry and mix until almost combined. Let sit for two minutes.
  5. Spray a pan with non-stick and heat to just below medium. While the pan is heating, whisk in the almond milk to the batter and mix until fully combined.
  6. Use an ice cream scoop to portion out the pancakes and a spatula to press them down into shape.
  7. Cover and let cook roughly ten minutes. Flip the pancakes, re cover and cook an additional 4-6 minutes until cooked through. Keep a careful eye on them after the last three minutes to ensure they don’t burn.
  8. Top with maple syrup and more coconut flakes if desired.
