  • 6 whole eggs
  • 1 cup baby spinach
  • 2 ounce smoked salmon
  • 2 ounce feta cheese
  • 2 tablespoons WFN Chia Seeds
  • 1/2 lemon zest
  • 1 tablespoon fresh dill (or 1 teaspoon WFN dried dill)
  • Salt & Pepper, to taste
Prep Time 5 minutes
Cook Time 15-20 minutes

Ingredients
  • 6 whole eggs
  • 1 cup baby spinach
  • 2 ounce smoked salmon
  • 2 ounce feta cheese
  • 2 tablespoons WFN Chia Seeds

Instructions
  1. Preheat the oven to 350°F.
  2. In a mixing bowl, whisk the eggs.
  3. Crumble the feta, chop up the smoked salmon into small cubes, and stir in.
  4. Add the spinach, dill, chia seeds, salt, and pepper and stir through.
  5. Line a muffin tray with 6 muffin liners. Using a spoon, dollop the chunky parts of the mixture evenly and pour over the remaining egg mixture.
  6. Bake at 350°F (180°C) for 15 to 20 minutes or until cooked.
Recipe Notes

Can store in the fridge for up to 3 days.
