It’s a messy business, however, what with soggy cookies and lumpy milk. So, I have a suggestion…

Instructions
Sugar-Free Chocolate Ganache
  1. Mix together melted coconut oil, Coco Monkey, and cacao powder.
  2. Stir together to combine and remove lumps.
  3. When completely cool, spread the ganache over the entire inside of each cookie cup to create a "milk-proof" barrier that keeps your cookie from becoming soggy.
Coconut Milk
  1. In a blender, mix together the coconut milk powder and water.
  2. Mix on low for 2 minutes, or until well blended. Chill in the fridge.
  3. Fill cookie cups with prepared coconut milk and serve immediately.

    My daughter is allergic to eggs and apples. What would be a good substitute for the eggs? Would egg replacer or flax seed work?
