Gluten-Free Thumbprint Cookies

  1. Preheat oven to 350 degrees Fahrenheit. Line cookie sheet with parchment paper and set aside.
  2. Place almond flour, coconut flour, coconut sugar, baking powder, and salt in a medium bowl. Stir together and set aside.
  3. In a medium bowl, soften the coconut oil, if solid, and add coconut syrup, egg, and vanilla extract. Whisk until well blended.
  4. Add the flour mixture to the wet ingredients and stir until combined.
  5. Form dough into 1-inch balls and place on cookie sheet (about 2 inches apart). Press thumb into the middle of each cookie to make an imprint.
  6. Fill each imprint with 1/2 teaspoon of jam.
  7. Bake for 8-10 minutes.
  8. Remove from oven and allow to cook on cookie sheet for 3-5 minutes.
  9. Transfer to wire rack to cool completely.
