The first time I tried a curried chicken salad, it was with a little trepidation. I couldn’t understand why anyone would mess with a perfectly good chicken salad!

But after a few bites, I understood. It was the tastiest chicken salad I’d ever eaten!

Curried chicken salad is now my favorite type of chicken salad. It’s just as easy to make as a regular chicken salad but has a ton of extra flavor.

Curried Chicken Salad with Homemade Mayonnaise

Today I’m going to share my best curried chicken salad recipe with you (I’ve tweaked them a lot over the years). It’s flavorful, with a touch of spice, but not hot (as some recipes with curry can be).

This salad keeps for 2-3 days, so if you are able to prepare a big batch at the beginning of the week, you’ll be able to enjoy it for lunch or dinner a number of times.

This salad is simple to put together. When made ahead of time, it allows you to get a meal on the table in just a few minutes.

Serve curried chicken salad over a pile of salad greens, with crackers, in a wrap or sandwich, atop of a slice of cucumber, or “stuffed” in an avocado.

This homemade curried chicken salad is a great family dish. It’s also fancy enough to serve to guests or take to functions.

The recipe below is made to serve 2-4 people. Double or triple depending on the number of people you’re feeding (or to have leftovers for later).

Tips for Making Curried Chicken Salad with Homemade Mayonnaise

  • Any plain cooked chicken will work in this salad. Make it easy on yourself by cooking chicken breasts in the crockpot or shredding a leftover rotisserie chicken.
  • If you plan to boil chicken breasts for this recipe, try boiling in chicken broth instead of water to add flavor.
  • I chose to make my own mayonnaise for this recipe since it’s difficult to find store bought mayonnaise without sugar or industrial oils. You can, of course, forgo this step and use any mayonnaise you choose. If you’ve never made mayonnaise, I think you’ll be impressed with how easy it is.

If you make the mayonnaise, you’ll need a food processor, blender, or immersion blender.

The mayonnaise recipe below makes about 2 cups. That’s more than you need for this recipe (unless you’re doubling it), but who wants to go to the trouble to make homemade mayonnaise and then use it all in one recipe? Refrigerate leftover mayonnaise in jar with a tight-fitting lid for 3-4 days.

Pecans add flavor and crunch. Use Wildy Organic’s soaked and dehydrated pecans as they are prepared in a way that makes them easier to digest.

Enjoy this curried chicken salad year round. If grapes are not in season, feel free to substitute dried cherries or raisins, but reduce the amount slightly! There are so many ways to eat this curried chicken salad with homemade mayonnaise, you can eat it any time!

Instructions
  1. If making mayonnaise, place egg, salt, and lemon in a food processor, tall cup (for immersion belnder) or blender.
  2. Blend until smooth and blended (about 30 seconds). The mixture will be frothy, but don't worry, it will turn into delicious (non-frothy) mayo after the next step.
  3. If using a food processor or blender, drizzle the oil in slowly as the machine is running. The key here is to go very slowly. This process will take a few minutes. If using an immersion blender, pour the oil in a little at a time and pulse to blend.
  4. Place cubed chicken in a large bowl and add the sliced grapes, celery and pecans. Stir to combine.
  5. Add mayonnaise, ginger, and curry powder. Stir to to coat salad evenly.
  6. Add salt and pepper to taste. You may also add more curry powder and ginger, if desired.

    I am curious, is there suppose to be an egg in the ingredients for the mayonaise? It is named in the instructions.
