Colorful Vegetarian Wild Rice Stir Fry

Instructions
  1. Cook rice according to package directions. Set aside.
  2. Pre-heat oven to 350 degrees Fahrenheit.
  3. Heat the oil in a large pan over medium to high heat.
  4. Toss in the veggies and cover. Cook for 10-12 minutes until almost tender. Stir/toss every couple of minutes.
  5. Meanwhile, whisk together the avocado oil, maple syrup, and balsamic vinegar to make the sauce.
  6. Chop the pecans and place them on a line baking tray. Bake in the oven for 6-9 minutes until slightly toasted. Pay attention to them as the burn easily! You only want them lightly browned.
  7. Remove the lid from the veggies and toss in half the dressing. Cook uncovered for another 3-5 minutes.
  8. To serve, divide the rice onto plates, top with the veggies, pecans and hemp hearts. Drizzle remaining dressing over top.

    do you have any recipes without coconut or avocados==some of us can’t handle these foods
