Coconut Pecan Overnight Oats
Finding the time to make a healthy breakfast can be challenging. Whipping up a batch (or two) of these coconut pecan overnight oats the night before means no extra time is wasted in the morning. Overnight oats are simple, easy and nutritious – a perfect way to start your morning!

Instructions
  1. In a blender, combine the almond milk, coconut milk powder, vanilla extract and maple syrup and blend well.
  2. In a large bowl, combine the oats and chia seeds.
  3. Pour the wet into dry ingredients and mix thoroughly.
  4. Portion the mixture out into two mason jars.
  5. Top with the pecans and coconut chips.
  6. Place in the fridge for at least eight hours, preferably overnight, and serve!
