Cheesy Herbed Cauliflower Rice

Herbed Cheese Sauce
Instructions
  1. Preheat oven to 350 degrees (if you’re baking the cauliflower rice).
  2. In a cast iron skillet, or other oven proof skillet, melt the red palm oil and add the riced cauliflower.
  3. Cook for 5 to 7 minutes, stirring occasionally, or until water has cooked off.
  4. Meanwhile, prepare the herbed cheese sauce. In a sauce pan, melt butter and cream cheese, whisking together.
  5. Add heavy cream and whisk well.
  6. Add cheese (if baking in the oven reserve a few tablespoons to sprinkle on top before putting in the oven) and seasonings and whisk well to combine until cheese is fully melted.
  7. Pour cheese sauce over the cauliflower rice and stir well to combine.
  8. If not baking in the oven, bring to a simmer and cook for a few minutes then serve.
  9. If baking, sprinkle reserved shredded cheese over the top and put skillet in the oven.
  10. Bake for 10 to 15 minutes or until bubbly throughout.
  11. Allow to stand for 5 to 10 minutes before serving.
Recipe Notes

If baking in a casserole dish, be sure to cook the cauli rice in red palm oil as directed. Make the cheese sauce and combine before pouring into a casserole dish, then bake.
