From here, the sap is fermented for 45 to60 days. To ensure maximum freshness and retain its nutritional qualities, the sap is bottled unfiltered and unheated.
As the coconut vinegar ages, it changes color from cloudy white to light yellow, then onto a clear-light amber. Sediment will appear at the bottom of the bottle, similar to raw apple cider vinegar. Other film and gel will form which is referred to as the mother culture. This is a natural characteristic which you can use to judge the quality and purity of coconut vinegar.
Adulterated and cheap versions of coconut vinegar will have been made from coconut water and will not contain the natural mother.
